老闆娘:這邊是煙燻鮭魚沙拉。
旁白:老闆娘林羿妏親切的招呼客人,因為不少人都是慕名而來。
客人:同事推薦,很浮誇的說這裡很好吃趕快先訂位。
客人:我要來吃飯的時候然後就同事就說你要不要來吃吃看這一家,然後說好啊我就先訂了。
老闆:就是要把食材切的越細越好,味道才燉的出來。
旁白:餐桌旁就是老闆林聖皓的廚房,只見他手沒停過,一個火爐上三個鍋子同時作業。
客人:天使麵很好吃,他的蒜香阿也不會很辣,也不會嘴巴會有味道。
旁白:清爽的海鮮天使麵加入醬汁軟絲等配料悶煮,最後淋上檸檬,是源自義大利早期挖礦工人很常吃的料理
而這道肉醬義大利麵更是店內招牌,香氣濃鬱的醬汁,每一口都能吃得到濃郁番茄的酸甜,搭配富有彈性的麵條及小肉塊令人意猶未盡。
客人:醬汁很好吃,對我來講我應該要吃三碗才夠。
老闆:其實義大利人很注重肉醬,它是每個家庭裡面都會有的一道菜,那也是義大利餐廳的靈魂最主要的一道菜,它的風格就代表了這間店的風格。
旁白:對林聖皓而言食材新鮮比什麼都重要因此從醬料到醃肉都堅持自己做每天一早先切好大量的蔬菜,豬後腿絞肉也得先用胡椒、茴香、鹽巴等調味,均勻攪拌後還要將番茄丁打成泥,上面再加上羅勒葉九層塔等香料混和味道緊接著放在鍋裡煎炒。
要把多餘的水份炒乾,肉炒到交才會香,再放入洋蔥、紅蘿蔔、芹菜等蔬菜拌炒,等到蒜泥吵到香味完全散發出來後,再下白酒增加果香味最後加入打好的番茄泥滾煮1小時。
老闆:每五分鐘要攪一次因為這個醬汁太濃稠了,都不攪的話這一鍋焦掉就要倒掉了。
